Zucchini with Parmesan
serves 4
Ingredients
2 ea medium zucchini, halved and sliced 1/2 inch thick
1/2 large sweet onion, halved and sliced 1/2 inch thick
1/2 C grated Parmesan cheese
Instructions
Sauté the onions until they begin to brown. Add the zucchini, tossing occasionally until just cooked through. Season to taste.
Sprinkle with Parmesan and cook 30 more seconds.
Plate and serve.
